This is my own recipe and I must say it is seriously good.
While I believe that your hair is your most important accessory and that all women are inherently beautiful when accessorized well (shoes are second as people will top to bottom you in a flash), we as women do what we can to take care of our complete selves. Most of us try to eat well and exercise when our busy lives permit. If you are as much a chocoholic and a peanut butterofphile as am I, here is something tasty just for you and at only 153 calories WITH the icing. This will also provide you with a whopping 10.6 grams of protein. Without the icing you’ll still get 10 grams of protein and only 100 calories!
One half ripe banana
One half teaspoon vanilla
2 tablespoons egg beaters
Mix together in a separate bowl and then add to the wet ingredients and mix well:
2 tablespoons PB2
1-2 tablespoons cocoa powder (depending on how chocolatey you like it. I like it dark and chocolatey so I use Hershey’s special dark and I use 2 tablespoons)
1 to 2 tablespoons of Splenda
One half teaspoon of baking powder
Place in a large custard dish or a small microwave safe bowl. Microwave for 1 minute to 1 minute and 20 seconds. Allow to cool before icing the cake.
Make a note of your timing and what size container it’s in because you will want to make this again.
2 tablespoons fat-free vanilla yogurt
1 tablespoon PB2
Splenda if needed to taste
I apologize for not having a picture of this cake iced but I did not have the ingredients to ice it here today. It can be topped with fresh berries or whatever you like. Pictures next to a couple of items to show you what the size looks like.
